Recipe ♥ Pasta Salad with Honduran Quesillo


  
I learned this recipe along time ago, and have modified it to make it tastier over the years. It’s a no-fuss pasta salad, and it’s one of our favorite dishes here at the Bendini home. It can be served alone or as a side dish, and it will be done in less than 10 minutes.

Ingredients:

  • 1 bag of Tri-colored Pasta (250 grams)
  • ½ pound of Mozzarella cheese or Honduran Quesillo (I prefer “quesillo” because it’s saltier) cut into small pieces
  • 1 Can of pitted black olives cut in halves
  • 1/3 cup black olive juice
  • 15-20 Cherry tomatoes cut in halves
  • 1 tbsp. garlic salt.
  • ½ tsp. of pepper
  • 1 tbsp. Oregano
  • 1 tbsp.  regular or balsamic vinegar (whatever you like)
  • 2 tbsp. Olive Oil

Directions:

  1. Cook the pasta in a large pot of boiling water until al dente. Drain, and cool under cold water.
  2. In a large bowl, combine pasta with the rest of the ingredients. Mix very well.
  3. Serve and enjoy!

Extras:
**If you like, sprinkle some parmesan cheese, especially if you used mozzarella.
**You can also add avocado, it’s amazing with avocado. I didn’t find them at the supermarket and that’s why they aren’t pictured. If you do, remember to add lemon juice to the avocado to prevent it from turning brown.

Makes about 4 servings.

  2. muy bueno el blog,pero por que no publicas en español ya que mucha gente en nuestro país no hablan ingles. y lo podria haber mucho mas visitas

    Muchas gracias por tu comentario, tienes razón, antes lo hacia en ambos idiomas pero mi publico era estaunidense y lo deje de tradicir. Pero he decidido volver a hacerlo
